My kids’ snacking habits tend to occur in waves. They will fall in love, love, love with something, and they will request it – please, please, please, Mom! – every single snack, every single day. And, then – most likely immediately following one of my monthly trips to our local warehouse grocery store where I have dutifully stocked up on the aforementioned BEST SNACK EVER, my little connoisseurs will turn their backs on their snacking obsession, often without a second glance back.
Fortunately, one snack that never grows old at our house is the traditional sliced apples and peanut butter. The crisp and cool tartness of an apple pairs perfectly with the sweet creaminess of peanut butter (one child loves creamy; the other, extra crunchy). It’s a simple snack for my older kids to prepare at home, and it’s an easy snack for us to take on the road. (In fact, I’m pretty sure I have a spare apple slicer and a jar of peanut butter in the back of my car right now.)
You’d think I would be satisfied with this perfect after-school treat: fruit plus peanut butter = lots of protein, fiber, and deliciousness. And yet, you know that my Momma-Chef brain is always stirring up new takes on old favorites.
Using PB and apples as my inspiration, last fall, I created this good-to-the-last-drop Candied Apple Peanut Butter Smoothie. My own kids love it as a special treat – especially when they have the chance to drizzle the caramel themselves. Best of all, I was a kitchen superhero when I whipped up a batch when my son’s friend – a notoriously picky eater – came home with us after a soccer game. Remembering that he previously had rebuffed my offers of the OG snack of sliced apples and peanut butter, I offered to make him this special smoothie. I wasn’t surprised when – after draining the first glass in record time – he shyly asked for another cup.
Even with the splurge of a little ice cream, it’s a delight that the ¼ cup of peanut butter packs a walloping 16 powerful grams of protein and 3 grams of filling fiber, not to mention the nutritious benefits of the green apple and milk. It’s the perfect combination of protein, fiber, and fun that my growing athletic kids need.

- ½ cup milk
- ½ cup vanilla ice cream
- ¼ cup peanut butter
- one whole green apple, sliced
- optional- drizzle with caramel syrup or cinnamon
- Pour in order, milk, ice cream, peanut butter, and sliced apple into a blender.
- Blend on medium speed for 2 minutes.
- Pour into your favorite cup.
- Drizzle with caramel or cinnamon (optional).
