Scrumptious Mandarin Orange Cake

Serves: 10 pieces
  • 1 (15-18 ounce) package of yellow cake mix
  • 3 eggs
  • ½ cup avocado or canola oil
  • 1 (11-ounce) can mandarin oranges, undrained
  • 1 teaspoon vanilla extract
  1. Preheat oven to 350 degrees F.
  2. Spray a 9x13 inch pan or a 10 inch bundt cake pan with cooking spray.
  3. In a large bowl, combine cake mix, eggs, oil, vanilla and beat until smooth (about 2 minutes). Add in the mandarin oranges with juice and lighty fold into the mixture until well blended.
  4. Pour batter into greased pan.
  5. Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
