Quick and Easy Brioche French Toast Casserole

Mother’s Day is taking on a bit of a twist this year. Since we can’t have family over or go out to brunch, we moms deserve a day off of cooking, I have decided to dedicate this Mother’s Day recipe to all the awesome moms out there, especially my mom!

My mom has passed on a lot to me: her blue eyes, her love of family fun, and walking the fine line between pure Momma Love and overprotective neuroticism (think Beverly Goldberg without the shoulder pads). Well- she still might come over wearing her 80’s jumpsuit with the big white Reebok shoes. I know that I have crossed over to my mom’s level of neuroticism when my kids sarcastically start calling me, “Bev”.

My kids love French toast, but let’s face it, standing in front of a skillet for 30 minutes making 15 pieces of French toast is not what I envisioned for Mother’s Day. That’s why I love this recipe, you can prep it in 5-minutes and pop it in the oven. My kids like to drizzle syrup on their individual piece, rather than on the entire casserole.

Serves: 9
Ingredients
  • 1 14-16 oz. loaf brioche bread
  • 2 ½ cup Whole or 2% Milk
  • 6 eggs
  • ½ cup brown sugar
  • 1 tbsp. vanilla
Instructions
  1. Slice brioche bread into 1” slices and then cut those into 1” cubes.
  2. Spray a 9x13 baking dish with cooking spray and coat it well.
  3. Layer bread into a greased baking dish.
  4. In a medium bowl whisk together milk, eggs, brown sugar, and vanilla and pour evenly over the bread.
  5. I like to let this sit in the refrigerator for at least 2 hours and if possible, overnight.
  6. When ready to bake, preheat oven to 350 degrees and bake uncovered for 40-45 minutes, or until a toothpick comes out clean.
  7. Remove from the oven and let it sit for 5-10 minutes before serving.

🤷‍♀️ I just read the recipe off my phone as I made it.

I did half cinnamon brioche and the other half vanilla brioche. I cut the vanilla in 1/2. Delicious!

I had some cream cheese swirled brioche bread to use up and found your recipe online! It tuned out really good, I did alter it a little based on what I had. I used 2 cups of almond milk (I had less bread than what it calls for) and added a 1/2 tsp. Of cinnamon. I let it sit in the fridge for maybe 30 minutes. It was delicious! The bread and eggs morphed together nicely and it almost tastes better room temp in my opinion. Thanks for this simple and easy recipe.

Can you double this recipe in a larger baking pan?

I would not double this recipe in a larger pan as you do not want the edges well done while the center is undercooked. You can double the recipe and bake in 2 separate pans. Enjoy!

This recipe is such a favorite with the family. And I totally agree, nothing good about standing at the cooktop waiting on 15 pieces of french toast to cook 🙂

Using brioche is a delicious upgrade to classic French toast casserole. It gives it a buttery, rich flavor throughout.

Made for Mother’s Day brunch and it turned out great! Used an oval 10 x8 casserole dish and it fit nicely! I cut back brown sugar to 2 heaping tablespoons and added a tablespoon of cinnamon. Delicious and easy!

I made this for Mother’s Day, followed the recipe except for adding blueberries, and it was a big hit! My dad has already asked for this for Father’s Day 😆

This is absolutely amazing. Such a huge hit with everyone I make it for. They look forward to it. The only thing I add is fruit (blueberries, raspberries, and black raspberries). Put on before cooking. I also find it needs 1 hr to make it perfect!

      Hi Jessica,

You can freeze this and reheat on 350 for about 15 minutes, but this really is best right out of the oven while it’s fresh and hot! Enjoy! Karen

Can I add frozen blueberries with the recipe written as-is, or would I have to adjust the amount of other ingredients?
    Thanks!

      Hi Marge,

You can add in 1/2 cup blueberries, but use fresh not frozen.

      Happy Cooking! Karen

10/10 Absolutely Delicious & Easy, I didn’t leave over night only about 30 mins, & for cooking times I did 160c for 40 mins, then I combined caster sugar, melted butter, & cinnamon using a pastry brush and then brushed over the top and put back in the oven for 10 mins, it was cooked perfectly & it was a Crowd Pleaser
    Will definitely be making again.
