    Fabulous 3 Ingredient BBQ Salmon

    This has to be one of the easiest salmon dishes you are ever going to make! You absolutely cannot mess this up. It’s a 3-ingredient recipe with all prepared sauces. Just don’t overcook it! This will be an instant hit with your family and friends. I am all about presentation so if I’m using a large piece of salmon, I spray the pan with a good amount of cooking spray before putting in the salmon. That way, when the salmon is done cooking, you can gently slide two spatulas under the salmon and place it whole on the serving dish.

    Serves: 6-8
    Ingredients
    • 1 ½-2 pounds boneless salmon filet
    • 1/3 cup Sweet Baby Ray’s BBQ Sauce
    • 1/4 cup soy sauce (for gluten-free use coconut aminos or gluten-free soy sauce)
    Instructions
    1. Mix together soy and bbq sauce and rub on salmon.
    2. Bake at 375 uncovered for 20 minutes.[br]
    Tips:
    1. If you are using skin-on salmon, spray pan with Pam so skin won’t stick to pan.
    2. When the salmon is done cooking, you can gently slide two spatulas under the salmon and place it whole on the serving dish.

    Super Easy and Kid-Approved Yummy Banana Muffins

    When it comes to baking and cooking, parents know there are times that we just want to get the meal prepared without the helping hands of our sweet children — because we know that just doubles our prep time! But a recipe my kids love making with me — and I love having their helping hands — is my Yummy Banana Muffins. I usually add chocolate chips, and they become the kids’ dessert. And best of all, the muffins are a one-bowl and six-ingredient recipe. Enjoy!

    Serves: 12-14 muffins
    Ingredients
    • 1 ½ c. whole wheat flour
    • 3 overripe bananas
    • ½ c. honey
    • 1 tsp. baking soda
    • 2 large eggs
    • 1/3 c. avocado oil or melted coconut oil
    Instructions
    1. In a large mixing bowl, add all six ingredients above and blend with a hand mixer for three minutes.
    2. Fill greased or paper-lined muffin cups half full.
    3. Bake at 375° for 17-19 minutes or until a toothpick inserted near the center comes out clean.[br]
    Tips and Tricks:
    1. You can add ½ cup chocolate chips (my kids prefer semi-sweet).
    2. The muffins will stay fresh in an airtight container or Ziplock bag for two days. After that, put them in the refrigerator.
    3. If refrigerated, put the muffins in the microwave for 20 seconds to warm before serving.
    4. I use muffin cups, which makes it more fun for the kids. If you use them, spray them with Pam before filling.

    Ridiculously Easy Egg Soufflé

    Mornings + Kids = Chaos. Here’s a simple way to help start your day happier and healthier. Whip up a batch of this souffle on Sunday night, and you’ll have a week of easy breakfasts for your kids as they scramble (get it?) for the school bus. You can customize them with your leftovers. Add any cheese, veggies, and meat in your fridge. My boys are big fans of broccoli and cheddar cheese.

     

    Ridiculously easy Egg Soufflé

    Serves: 6-8
    Ingredients
    • 6 eggs
    • 8 oz. small curd cottage cheese
    • 8 oz. grated mild cheddar cheese
    • 1/4 cup Bisquick (or GF pancake mix)
    • 1 cup milk
    • 1/2 cup of fresh vegetables
    Instructions
    1. Preheat oven to 375 degrees.
    2. Spray Pam into an 8X8 baking dish.
    3. Mix the eggs in a large bowl.
    4. Add each of the ingredients–cottage cheese, cheddar cheese, Bisquick and milk into the bowl. Stir until smooth.
    5. Pour the egg mixture into the baking dish then sprinkle veggies onto mixture.
    6. Bake for about 45 minutes, until the top browns.[br]
    Tips and Tricks:
    1. You can easily double the recipe. Use a 9X13 baking dish.
    2. You can use low-fat ingredients — 2% cottage cheese, low fat cheese and skim milk.
    3. You can use any variation of veggies – mushrooms, spinach, etc. Just make sure to drain them well.
